Who doesn't love a good dessert? But with being gluten-free, sometimes I don't want to have to make a whole cake just for me. That's why I came up with this awesome gluten-free strawberry shortcake that takes 3 minutes to make (yes, just 3 minutes!) and is a single-sized portion. Ready to see how to make it?
Here's what you'll need:
1 box of Pillsbury Gluten-free Funfetti cake mix
3 Strawberries
Whipped Cream
Sprinkles
Water
First pour about 1/2 a cup of cake mix into your bowl. You can add more if you'd like but don't go too crazy. I've found that it I add too much it's hard to get it to cook evenly. It doesn't need to be an exact amount though; I normally just guesstimate as I pour it in.
Then slowly add water until it reaches the consistency of dough. You don't want the consistency of batter, even though this is cake mix. Once it's well mixed, let it sit for a minute. You'll see it rise a bit and those air bubbles are going to help keep the cake fluffy. While you're waiting, thinly slice your strawberries.
Next, pop it in the microwave. Since everyone's microwave is a little different, my suggestion is to microwave it for 30 sec. increments, checking in consistently to make sure of when it's done. I normally only need to do this for 1 minute.
Now, use a small spatula to remove the cake from the sides of the bowl.
Using that same spatula, cut a grid pattern into your cake. Be careful not to smush it while you're doing this.
Use your spatula to toss the cake around.
Add your strawberries to the cake and toss them together.
Next, add a squirt of whipped cream to the top. This part's optional, but why wouldn't you want whipped cream?!
Add some sprinkles to the top and you're all done. 1 serving of gluten-free strawberry shortcake in just 3 minutes!
Plate and serve.
