I don't know about you but there're only so many sweet potatoes I can eat. For some reason though, whenever I go to the grocery store I feel a need to get a bunch and then immediately regret it. Maybe it's because they have a pretty long shelf life or because I think they'll be as versatile as potatoes. So an excess of sweet potatoes is what prompted me to make this recipe
What you'll need:
6 Sweet potatoes
1 Apple
3/4 cup Apple juice
1/2 Onion
1 1/2 cup Water
2 in. piece of Ginger
1 Tablespoon Garlic
1/2 Tablespoon of Cinnamon
A dash of salt
To top it all off:
Sour cream
Feta cheese
First peel your potatoes. (Save yourself and don't try to put them down the garbage disposal! Not gonna lie, I made this mistake and regretted it for the two days it took me to get the stupid thing unclogged. Yes, rookie move. I know.)
Then I like to put the potatoes in the microwave for a good 8-10 minutes so they soften up some and become easier to cut
While the potatoes are heating up, peel your ginger and chop it up really fine
Then chop up your onion and apple. You can either cut them up really fine or a little chunkier depending on how smooth you want the soup to be
By this point your sweet potatoes should be soft enough for you to cube them up pretty easily
Then add your water, apple juice, garlic and ginger to a pot and turn the heat up to medium high. Once that's stirred in well, add the sweet potatoes, onion, and apple
Cover it up and let it boil for a good 20 minutes or until the sweet potatoes and apples are extra soft. Once this is the case, remove your pot from the heat
At this point, you have two options. You can either put the soup in a blender to get it really smooth (just be careful cause it's still crazy hot!) or you can use a potato masher and your soup will still be fairly smooth (be even more careful with the crazy hot soup. I totally burned myself three times (yes you'd think I'd learn after the first one) by tiny drops of soup flying through the masher)
Once your soup is as smooth as you want it, add the cinnamon. Then, give it a taste test and you'll probably want to add a super tiny dash of salt
This is about the consistency I aim for
When ready to serve, I like to mix in a little sour cream and garnish with some feta cheese on top. It tends to give it a nice tart taste that contrasts well with the sweet potatoes. Just be careful not to add too much! I don't add this until serving because the sour cream doesn't reheat very well
And there you go. Super easy!
